Would you like to adjust your favourite recipes for your slow or pessure cooker?
It's easy if you think about how the ingredients come together. There is no blast of heat and slow cookers' heat comes from the sides as well as the bottom, so apply the following guidelines:
• Do not overfill: Fill the cooker to half – three quarters including the liquid. This may be less liquid than in the original recipe.
• Dairy: Because most dairy, except condensed milk, curdles, add at the end;
• Assess ingredients for starch: as pasta and rice become starchy, cook them separately and add at the end. For starchy vegetables like potatoes, assess whether you want the starch to thicken the sauce, otherwise treat like pasta.
• Timing: As a general guide, you can allow an extra 25% to recipe normal cooking times, for example, for 40 – 50 minutes of normal cooking allow 50 - 60 mins. + for slow cooking.
