Although almost all food items can be frozen, from raw to cooked food items so that you can make the most out of seasonal produce throughout the year, there are some food items that should not be frozen:
• Vegetables with a high water content become mushy: cucumbers, lettuces, celery
• Root and Delicate Vegetables that lose their texture: potatoes, beetroot, turnips, spinach, broccoli, green beans
• Delicate proteins like fish lose their texture. With fish fresh is best.
• Dairy products will curdle when thawed
• Egg based sauces will split when thawed
